A group of scientists from Zhejiang University in China has determined “the healthiest way to eat broccoli.”

The cruciferous vegetable is full of sulforaphane, a compound that can help maintain blood sugar levels. Studies even show that it might have anti-cancer properties. However, once broccoli is cooked for several minutes, the benefits of sulforaphane are destroyed.

To absorb the compound, broccoli must be “damaged” before they can be absorbed.

The study suggests chopping the vegetable into 2-millimeter (mm) pieces. The chopped broccoli must then “sit” for 90 minutes before it is gently stir-fried to boost their sulforaphane levels by 2.8 times.

While the reason for the boost remains unclear, the researchers believe that waiting before cooking chopped broccoli lets the sulforaphane “develop.” Waiting for 90 minutes before stir-frying the vegetable seems like a fair trade, especially since it isn’t as easy to absorb sulforaphane when it is taken as a supplement.

How the study was carried out

Researchers from the university bought several heads of broccoli from a local market. The produce was then chopped to activate the enzyme myrosinase, which plants use to protect themselves against herbivores. With the enzyme, sulforaphane becomes available for absorption.

The chopped broccoli was then divided into three piles. The first was left as it was, the second pile was immediately stir-fried for four minutes, and the remainder was cooked quickly over high heat after letting it sit for 90 minutes.

If you don’t want to wait that long, the researchers also suggest that waiting for only 30 minutes can also maximize sulforaphane absorption. However, this hasn’t been tested in the study. The researchers are also looking into how they can “make the most of the vegetable’s nutritional benefits without having to do so much preparation.”

In a separate study published in October 2017, it was determined that consuming broccoli daily can help prevent various health concerns from arthritis to heart disease. The researchers explained that cruciferous vegetables like cauliflower and kale contain a substance that promotes gut health and barrier function. They added that “maintaining a healthy intestinal lining could prevent leaky gut syndrome,” which leaves the body vulnerable to toxins and pathogens.

Professor Gary Perdew, the lead author from Penn State University, said, “There are a lot of reasons we want to explore helping with gastrointestinal health and one reason is if you have problems, like a leaky gut, and start to suffer inflammation, that may then lead to other conditions, like arthritis and heart disease.”

  • Leafy green vegetables – Includes kale, spinach, mustard greens, collard greens, and Swiss chard. A recent study showed that the husk of an avocado seed is the healthiest part of the fruit as it contains a vast number of key nutrients that show potential in alleviating cancer, heart disease, and other diseases.

As part of the study, a team of researchers at the University of Texas Rio Grande Valley ground about 300 dried avocado seed husks into 21 ounces of powder. The powder produced three teaspoons of seed husk oil and slightly more than an ounce of seed husk wax following an additional process.

The experts were able to identify 116 compounds in the oil and 16 in the wax. Among the oil’s components included heptacosane, a compound known to mitigate tumor cell growth. The team also found that the oil contained dodecanoic acid, which helped increase good cholesterol levels and reduced the risk of atherosclerosis, heart attacks and, strokes.

Likewise, the scientists detected traces of docosanol in the husk oil. The compound is the primary ingredient in manufacturing antiviral drugs for the treatment of cold sores or fever blisters. The experts also noted that the wax contained a vast number of compounds such as butylated hydroxytoluene, an antioxidant food additive and preservative commonly used in cosmetics.

Researchers said they will alter several of the natural compounds found in the husk to develop better drugs with fewer side effects.

“It could very well be that avocado seed husks, which most people consider as the waste of wastes, are actually the gem of gems because the medicinal compounds within them could eventually be used to treat cancer, heart disease and other conditions. Our results also suggest that the seed husks are a potential source of chemicals used in plastics and other industrial products,” researcher Dr. Debasish Bandyopadhyay told the Daily Mail online.

The results were presented at the National Meeting of the American Chemical Society in Washington, D.C.

Potential implications in cancer, heart disease management

The recent findings may very well show potential in addressing and preventing the onset of cancer and heart disease, both of which remain to be the leading causes of death worldwide.

According to the World Health Organization (WHO), cardiovascular disease (CVD) remains to be the leading cause of death around the world, killing more people than any other causes. Data from a WHO fact sheet revealed that CVD accounted for nearly 18 million global deaths in 2015 alone. This rate equated to 31 percent of all deaths worldwide.

The fact sheet also showed that 7.4 million of these deaths were associated with coronary heart disease, while 6.7 million were due to stroke. More than three quarters of all CVD-related deaths around the world occurred in low- and middle-income countries.

Heart disease can be mitigated by addressing risk factors such as tobacco and alcohol use, unhealthy diet, obesity, and lack of exercise.

In another WHO fact sheet, cancer was recognized as the second leading cause of morbidity and mortality across the globe. According to the fact sheet, about 14 million new cancer cases were recorded in 2012 alone. Data also revealed that the number of cancer cases worldwide is expected to increase by about 70 percent over the next two decades. Tobacco use remained the leading cause of cancer, followed by disease-causing infections such as hepatitis and the human papilloma virus.

This new study suggests that a cream infused with EGCG can be used to treat recent injuries. These results, while still in their initial stages, could have profound implications with how medical treatment and management plans are designed.

Scars are formed when the skin is injured and there is an overproduction of collagen which forms scar tissues. As these tissues heal, they release histamin which causes the injured area to become red and itchy. Most everyone knows not to scratch the inflamed area, as further damage to the area can deepen the scar. However, researchers of this study indicated that EGCG disrupted the skin’s natural response, effectively soothing the area and making the scar appear less red and thick and making the area less itchy.

Green tea helps skin heal

This small study is just one of the numerous studies which prove the health benefits of green tea — especially its efficacy in skin cell rejuvenation. A 2003 study by the Medical College of Georgia found that polyphenols found in green tea eliminated free radicals in the body while safeguarding healthy cells. The most abundant polyphenol in green tea — the same EGCG mentioned earlier — was noted to reactivate dying cells. Dr. Stephen Hsu, the lead author of this study wrote that, “cells that migrate toward the surface of the skin normally live about 28 days, and by day 20, they basically sit on the upper layer of the skin getting ready to die. But EGCG reactivates them. I was so surprised.”

Dr. Hsu and his team also noted that EGCG somehow manipulated basic cell behavior, so that instead of cells dying normally, they reverted back to the dividing stage. Somehow — their team was unable to establish the exact mechanisms involved — EGCG reacted with cell DNA to make them produce more energy. The most obvious result of this interaction is an improved skin condition. This not only has aesthetic value, but practical purposes as well. Dr. Hsu reasoned that if skin healed faster, the injured area would be less at risk of getting infected.

“If skin cells surrounding wounds or infections don’t heal in time, fibroblasts in the connective tissue may rush in to fill the void and cause scar tissue formation,” Dr. Hsu said. “If we can spur the skin cells to differentiate and proliferate, we can potentially accelerate the wound-healing process and prevent scarring.”

Likewise, another study in 2013, published in the International Journal of Surgery concluded that green tea extract dramatically improved the healing process of surgical wounds in rats. Green tea extract was compared to other plant-based derivatives such as  grape seed, lemon, rosemary, and jojoba. While all of these extracts improved wound healing, green tea extract, with its high concentrations of EGCG, proved to be the most effective.

Green tea extract is not limited to severe skin lesions, however. The alternative treatment can be used to reduce the appearance of pimples, nodules, and cysts found in body. Dermatologists are now recommending EGCG-infused products to their patients to reduce the swelling and scarring of acne. Accordingly, these natural treatments are more easily accepted by the body, producing fewer side effects. An animal study published online in the Journals of Gerontology Series A revealed that eating strawberries may well prevent memory decline and subsequent onset of Alzheimer’s disease. To carry out the study, a team of researchers from the Cellular Neurobiology Laboratory at the Salk Institute examined a strain of laboratory mice that were genetically modified to develop premature aging and Alzheimer’s disease. This strain was found to exhibit physical and cognitive decline in as early as 10 months, something that normal mice do not show.

The research team also assessed the effects of fisetin, a compound found in strawberries, on the cognitive status of the animal models. One group of three-month-old prematurely-aging mice were given daily fisetin doses with their food for seven months, while another group received the same food but without the compound. The animals models were then subjected to a variety of activity and memory tests. In addition, the experts studied the levels of specific proteins in the animals. These proteins were associated with inflammation, brain function, and stress response.

“At 10 months, the differences between these two groups were striking. Mice not treated with fisetin had difficulties with all the cognitive tests as well as elevated markers of stress and inflammation. Brain cells called astrocytes and microglia, which are normally anti-inflammatory, were now driving rampant inflammation. Mice treated with fisetin, on the other hand, were not noticeably different in behavior, cognitive ability or inflammatory markers at 10 months than a group of untreated 3-month-old mice with the same condition,”  lead researcher Dr. Pamela Maher told Sci-News.com.

“Mice are not people, of course. But there are enough similarities that we think fisetin warrants a closer look, not only for potentially treating sporadic AD but also for reducing some of the cognitive effects associated with aging, generally…Based on our ongoing work, we think fisetin might be helpful as a preventative for many age-associated neurodegenerative diseases, not just AD, and we’d like to encourage more rigorous study of it,” Dr. Maher added.

Previous studies confirm that strawberries are beneficial to brain health

The recent findings were reflective of previous research linking the strawberry compound to reduced odds of Alzheimer’s disease. A 2015 study carried out by researchers at the Salk Institute for Biological Studies showed that fisetin was beneficial in maintaining the cognitive health of animals predisposed to AD. As part of the study, the research team pooled two groups of genetically predisposed mice and divided them into two groups. The experts found that the control group exhibited difficulties in basic memory function. In contrast, those who were given a fisetin-enriched diet performed just as well as mice that were otherwise not predisposed to the disease. The compound was also notably effective in warding off the disease, even if it would have been continuously progressing, a researcher said.

On the other hand, a 2012 study revealed that eating strawberries may help prevent memory decline in human subjects. To carry out the study, a team of researchers at the Harvard Medical School examined nearly 122,000 registered nurses aged 30 to 55 years. According to the researchers, the participants who ate two servings of strawberries per week were able to delay memory decline by more than two years, compared with those who did not eat the berries.

Health expert Dr. Holly Phillips said the flavonoids in strawberries greatly contributed to the fruit’s brain-boosting properties. The doctor noted that stress and inflammation are major risk factors for cognitive decline, and that flavonoids contain antioxidant and anti-inflammatory properties that help counter these adverse effects.

Grape seed extracts can promote teeth durability and stave off tooth decay, a recent study in the Journal of Dental Research revealed. According to a team of researchers at the University of Illinois at the Chicago College of Dentistry, natural compounds found in grape seed extracts fortify the teeth’s dentin. Dentin is the dental tissue beneath enamel, which is mostly made of collagen. The researchers also noted that grape seed extracts may increase the life span of dental fillings.

Dental fillings can be made up of amalgam or composite resin. Researchers said dental amalgams are usually made of a combination of heavy metals such as mercury, silver, tin, or other materials. Dental amalgams are known for their low cost and long life span of 10 to 15 years or higher. On the other hand, composite-resin fillings are more aesthetically-designed, as the plastic and fine glass particles allow dentists to use filling colors that match the patients’ teeth. However, composite fillings last only five to seven years.

A federal report found that more than 90 percent of adults aged 20 to 64 have cavities. In order to address cavities, dentists take out the decay or dental caries using a drill and plug it up with a filling. According to researchers, resins need to bind with the dentin during the filling process. The researchers noted that the area between the teeth and the resin, called interface, remained a weak point that often led to the breakdown of teeth restorations. The health experts said that secondary caries and margin breakdown were the top causes of failed adhesive restorations. “When fillings fail, decay forms around it and the seal is lost. We want to reinforce the interface, which will make the resin bond better to the dentin. The interface can be changed through the use of new natural materials…The stability of the interface is key for the durability of such adhesive joints, and hence, the life of the restoration and minimizing tooth loss,” researcher Ana Bedran-Russo said in DailyMail.co.uk.

The recent study found that a combination of grape seed extracts and plant-based oligomeric proanthocyanidins prompted damaged collagen to repair itself. According to Bedran-Russo, interlocking the resin and collagen-rich dentin offered better adhesion and did not rely on moisture.

The study was funded by National Institute of Dental and Craniofacial Research.

Oral health status in the U.S.

Oral and dental health issues remain a major burden in the U.S. Data from the Centers for Disease Control and Prevention (CDC) revealed that nearly 18 percent of children aged five to 19 years old had untreated dental caries in 2015. The CDC also showed that more than a quarter of adults aged between 20 and 44 years had the same condition in 2015. In addition, CDC data revealed that 83 percent of patients aged two to 17 years made dental appointments in 2015, while 62 percent of adults aged 18 to 64 and 62.4 percent of seniors over 65 years did so in the same year.

Furthermore, the CDC noted that disparities in oral health continue to exist across ethnic groups in the U.S. According to the CDC, non-Hispanic blacks, Hispanics, American Indians, and Alaska Natives generally have the worst oral health of any racial and ethnic groups in the country. Mexican American and black, non-Hispanic children have the highest rates of tooth decay among young patients aged two to eight years old. On the other hand, blacks, non-Hispanics and Mexican Americans were nearly twice as likely to suffer untreated tooth decay compared with white, non-Hispanic adults.
